Anything by Samuel Hazo, especially Rush and Ride.
Nobuo Uematsu and Joe Hisashi are REALLY good classic artists too (Nobuo does final fantasy's music, Joe does Miyazaki's music, like Spirited Away and Castle in the Sky)

My personal favorites are

Holst's Suites in Eb and F (Eb is better than F) which are also called his first and second respectively.

If you're into the orchestral side I like Finlandia by Jean Sibelius,  Saint-Saens Third Symphony (The Organ Symphony) Especially movement III (Adagio), and Enigma Variations by Elgar especially Variation IX "Nimrod"  It's a beautiful piece of music.  Also Pines of Rome or Pini de Roma by Respighi

For chamber music you have Adoremus Te Christe by Quirino Gasparini, Achieved is the Glorious Work: Hayden which may also be orchestral, and Canzona by Marini, which is a Renaissance piece.

Another Great Renaissance piece is The Danserye (don't remember who wrote it), a 12 section piece

And that's just stuff that I haven't seen mentioned yet, although it very well may have been.

In some of REDs songs they have a few Classical bits. I heard tons of Classical music but I don't know who made them.
