My personal favorites are
Holst's Suites in Eb and F (Eb is better than F) which are also called his first and second respectively.
If you're into the orchestral side I like Finlandia by Jean Sibelius, Saint-Saens Third Symphony (The Organ Symphony) Especially movement III (Adagio), and Enigma Variations by Elgar especially Variation IX "Nimrod" It's a beautiful piece of music. Also Pines of Rome or Pini de Roma by Respighi
For chamber music you have Adoremus Te Christe by Quirino Gasparini, Achieved is the Glorious Work: Hayden which may also be orchestral, and Canzona by Marini, which is a Renaissance piece.
Another Great Renaissance piece is The Danserye (don't remember who wrote it), a 12 section piece
And that's just stuff that I haven't seen mentioned yet, although it very well may have been.
